Asian Chicken Burgers

Last night we decided that we keep making the same kinds of burgers over and over again so, we decided to try something different and since we love Asian food it was only fitting to make an Asian Chicken burger!

Personally I feel like this dish could be better made with pork however it's all a matter of preference and we are trying to cut back on our consumption of red meat. I hope you enjoy this recipe as much as I did!

Ingredients
1 lb ground chicken
Sesame Seed Buns
Green onions
3 cloves of Garlic finely minced
Grated ginger (about two tablespoons
1 tablespoon soy sauce
2 tablespoons of honey
A pinch of salt and pepper

Bread Crumbs are option

For the Mayonnaise
1 teaspoon of sesame oil
1 teaspoon of soy sauce
1 teaspoon of honey
1 teaspoon of cayenne pepper
1/4 a cup of mayonnaise

1. Finely cut the garlic and green onions and grate the ginger for the chicken patties

2. Combine the ground chicken, onions, garlic, ginger, salt, pepper, soy sauce, and honey in a bowl and shape into patties. Now - if you find that your patties are very moist and not sticking well then you can choose to add bread crumbs. I did this so that I didn't have to let the patties sit for 45 minutes covered in the fridge and I liked the result!

 3. Place patties on the grill and begin preparing mayonnaise.
4. Combine soy sauce, sesame oil, honey, mayonnaise, and cayenne
5. Toast your bun and add the mayonnaise.

Food of all Sorts for Watching Sports

Superbowl Sunday was a busy day for grocery stores and cooks alike. With plans of attending a friend's Superbowl party, an empty fridge, and just 2 hours to get to the store, get cooking, and get out the door, I knew exactly what I needed to do to make sure I brought delicious but two easily prepared snacks for the party - Salsa de Nuno and Party Pinwheels. I must say the salsa was a bigger hit than usual and the pinwheels flew off the plate so today I will share these quick and easy recipes with all of you.



Salsa de Nuno
The name of this dish is derived from the 9 ingredients used to make it and "Nuno" being the root of my last name which in Portugese means nine.

Ingredients
Three cloves of garlic
1/2 a large sweet onion
1 green pepper
1 serrano pepper
1 habanero pepper
8 roma tomatoes
1 cup of cilantro
2 limes
1 tsp. sugar

1. Dice the first 7 ingredients and mix in a bowl

The colors of the ingredients are so beautiful!
2. Squeeze the two limes over the salsa and add a pinch of sugar. Stir, cover, and refrigerate - after bout 30 minutes the salsa will have absorbed the lime and be delicious!

Optional: Additional sugar to sweeten the salsa as well as salt can be used to fine tune the flavor. Another option is using cilantro paste to make a "creamier" salsa.




Party Pinwheels
These pinwheels are perfect for any party - only some assembly is required!

Ingredients
Deli Salami
Deli Pepperoni
Large tortillas
Whipped cream cheese
Romano cheese
Pesto
Pizza Sauce
Crushed Red Pepper

Pepperoni Pinwheels
1. Lay out the tortilla and spread whipped cream cheese as a base
2. Spread pizza sauce over the cream cheese and sprinkle crushed red pepper on top
3. Place pieces of pepperoni across the tortilla - leave the edges clear as you will most likely have to discard edges of the wrap. I used large sandwich size deli meat so I placed 3 across the tortilla
4. Tightly roll the tortilla, starting at the furthest end and tucking it under until completely rolled.
5. Wrap tightly in saran wrap and let sit for at least 10 minutes
6. Unwrap the saran wrap and with the seam facing up, cut 1/2 inch pinwheels.

Salami Pinwheels
1. Lay out the tortilla and spread whipped cream cheese as a base.
2. Spread pesto over the cream cheese and sprinkle romano cheese on top
3. Place salami across the tortilla
4. Tightly roll the tortilla, starting at the furthest end and tucking it underl until completely rolled.
5. Wrap tightly in saran wrap and let sit for at least 10 minutes.
6. Unwrap the saran wrap and with the seam facing up, cut 1/2 inch pinwheels.

Feel free to try different ingredients and make these your own!

Non- (Naan) Pizza's

Tonight I am going to share two recipes for a delicious personal size dish that is simply fantastic to make! The Bistro at my office features wonderful flat bread pizzas and one day after they served Chicken Curry for lunch they had leftover Naan which I requested they used for my pizza. I shared this recipe with a friend who thought my Naan-Pizza recipe was for a Non-Pizza. The name is sticking around and so is the recipe.

Pesto Spinach Tomato Pizza Recipe
This recipe is healthy, fresh, and easily made into a fantastic vegetarian dish.


Ingredients:

Plain Naan
Olive Oil
Fresh Spinach
Garlic (chopped)
Sun Dried Tomatoes
Roma Tomatoes
Feta Cheese
Mozzarella Cheese
Chicken
Basil
Pesto (I enjoy making mine from scratch but for this recipe I used store bought)

1. First, heat the oven to 350 degrees and prepare a baking tray with tin foil lightly coated in cooking spray
2. Melt 1/3 a stick of butter in a small skillet with chopped garlic until fragrant - transfer to a small dish
3. Sautee the chicken in olive oil, garlic and cracked black pepper
4. Sautee the spinach in olive oil for two minutes or until wilted (preferably with a lid)
5. Brush the garlic butter onto the naan then cover with pesto as a sauce.
6. Place a thin layer of spinach on pizza then add mozarella on top
7. Add chicken, tomatoes, feta cheese, and basil (basil can be added at the end but I like it this way)
8. Place in the oven and enjoy!!
9. Cook for 5-10 minutes or until cheese is melted


BBQ Chicken Pizza
This is a very savory and very good quick lunch or dinner. Your friends will be requesting a bite of your BBQ Chicken Pizza!

Ingredients:

Naan
Garlic
Butter
Montgomery Inn BBQ Sauce
Crushed Red Pepper
Texas Pete Wing Sauce
Mozzarella Cheese
Red Onion

1. First, heat the oven to 350 degrees and prepare a baking tray with tin foil lightly coated in cooking spray
2. Melt 1/3 a stick of butter in a small skillet with chopped garlic until fragrant - transfer to a small dish
3. Sautee the chicken in olive oil and season with crushed red pepper
4. Slice the red onion into thin strips then cut in half, they're much better bite sized!
5. Mix 1 cup of Montgomery Inn BBQ Sauce with a 1/2 cup of Texas Pete Wing Sauce
6. Spread garlic butter onto the naan then pour the BBQ sauce and spread
7. Top with cheese and red onion (I believe the more onion the better but that choice is up to the chef)
8. Toss chicken in remaining BBQ sauce until coated then add to pizza
9. If any sauce is remaining, drizzle across the top
10. Cook for 5-10 minutes or until cheese is melted




And there you have it, two delicious pizzas ready for you and a friend! Cut into fourths and share two slices of each! Hope you enjoy your Non-Pizzas!
